Yellowfin Tuna Loading
One of the main ports of landing for local long-line tuna-fishing boats is Muthtuwal Harbor, a busy fish-dock just outside of Colombo, the capital of Sri Lanka. Once the sorting and grading has been completed, the fish are loaded into ice-trucks for onward transport to the main processing factory at Dankotuwa, near Negombo. The bulk of the highest quality fish, known as A++ grade, command the highest prices at auction. They are flown straight to Japan, where they will be resold for the sashimi market. Sashimi, often the first course in a formal Japanese meal, is believed to be the finest dish in Japanese cuisine, so the Japanese are prepared to pay a lot for the top grades of tuna.
